A former pastry chef at Berkeley's famous Chez Panisse restaurant, David Lebovitz is known for his books and blog about living the sweet life in Paris. He is considered a foremost expert on sweets, Parisian pastry, and chocolate.
We had an opportunity in 2009 to visit Paris with him and see families of chocolate artisans working together - an old French tradition. That trip, more than anything, inspired our chocolate journey and led to the creation of Dandelion Chocolate.
