A former pastry chef at Berkeley's famous Chez Panisse restaurant, David Lebovitz is known for his books and blog about living the sweet life in Paris. He is considered a foremost expert on sweets, Parisian pastry, and chocolate.
We had an opportunity in 2009 to visit Paris with him and see families of chocolate artisans working together, an old French tradition. That trip, more than anything, inspired our chocolate journey and led to the creation of Dandelion Chocolate.
