Inspired by the seasonal simplicity of Neapolitan gelato shops and California's renowned dairy and fruit producers,we combine fresh Italian ricotta with Dandelion chocolate shards, candied kumquat, and caramelized pear chunks to create the deliciously creamy center of our (gluten-free!) Hazelnut Ricotta Torta. Sandwiching the filling are two crisp layers of hazelnut dacquoise; and the Torta is topped with rich chocolate-caramel ganache, then garnished with toasted hazelnuts and candied kumquat slices.
These cakes are made to order, and require 48-hour advance ordering (for pickup, Monday through Friday).
This eight-inch Torta serves 10 to 12, and is best enjoyed within two to three days. Please keep refrigerated.
