Each of the five varieties in this 25-piece assortment draws inspiration from Mårtensson's years growing up in southern Sweden, and especially highlights the country’s wild berries. Mårtensson likens berries to pearls of the forest — delicious hidden treasures that reward those who seek them with deep, fruity flavors ranging from tart to creamy to sumptuously sweet.
Mårtensson's Swedish Lingonberries Bonbon honors the small, bright-red berry that is a staple in Swedish kitchens with a velvety ganache of lingonberries, cream, and our fudgy 70% Camino Verde, Ecuador chocolate.
A classic pairing of morello cherries and our 70% Camino Verde, Ecuador chocolate, Mårtensson’s rich, tart-yet-sweet ganache-filled truffle has a firm, chewy texture.
Mårtensson explores the slightly floral flavor of rosehips with a caramel-and-rosehip ganache, accented by an aromatic hint of cardamom, and a snappy outer shell made from our classically chocolatey 70% Camino Verde, Ecuador chocolate.
Mårtensson fills a thin layer of our rich 70% Camino Verde, Ecuador chocolate with a liquid interior that balances sweet, fruity raspberries with an herbaceous, slightly savory touch of rosemary salt.
This truffle features two sought-after Swedish berries. The deep, complex flavors of black currants mingle with tart, creamy cloudberries in a silky filling that Mårtensson coats with crushed almonds for subtle crunch, then enrobes in 70% Camino Verde, Ecuador chocolate.
We were so impressed by Håkan Mårtensson’s unusual and delicious flavor combinations for our 2021 Advent Calendar, we couldn’t resist inviting him to collaborate on a larger collection. So for the first time ever, we bring you a confection collection crafted not here in San Francisco, but all the way across the country in Beacon, New York. This festive bonbon collection unites contrasting Scandinavian flavors and textures with Dandelion chocolate, yielding mouthwateringly unique confections.
Håkan Mårtensson of HÅKAN Chocolatier crafts chocolates and confections featuring hard-to-find ingredients with a distinctly Nordic bite, balancing salty and sweet, bitter and sour, and rough and elegant flavors. Drawing upon his background as a sculptor on the Swedish National Culinary Team, Mårtensson’s chocolate speakeasy in Beacon, NY offers a wide selection of the chocolatier’s sculptural creations, including stunning bonbons
