Fall Cranberry Pistachio Tart
Energized by a hint of Fall in the air, we set out to create a decadent seasonal pastry celebrating the flavors of autumn. The lively tartness of cranberries perfectly complements the natural fruitiness of our 70% Ambanja, Madagascar single-origin chocolate, and pairs beautifully with the soft crunch of pistachios.
Lisa crafted this rich tart to highlight autumnal fruit and nuts: A delicately crisp, Oreo-inspired chocolate crust hosts a thick layer of buttery, chewy caramel loaded with pistachios and festive spices. The caramel is covered with tangy, pickled-cranberry jam made of fresh cranberries simmered in Banyuls wine vinegar enlivened with orange zest, bay leaf, and vanilla bean. And topping off the elegant tart is a generous layer of lush Madagascar chocolate ganache, garnished with crushed roasted pistachios.
This 9” tart is best enjoyed at room temperature. Please store in the refrigerator, and allow it to sit out for 30 minutes before serving.
