In 2016, Freddy Salazar’s family hosted Eric (along with Mufu, Bret, Ryan, and Greg), who is the maker of this bar and the Costas Esmeraldas 70% bar. Not only did they get to visit the farm and fermentary and help with cacao production tasks such as pruning trees and turning beans, but they also had the rare opportunity to learn more about Freddy’s experimental and ever-evolving approach to growing, fermenting, and drying his beans. Freddy has a reputation for producing high-quality speciality cacao, and it is well-deserved: we are never disappointed by what we see, smell, and taste from the hands of his skilled team.
Eric goes light on the roast, and credits Freddy’s quality beans for their exceptional flavor. We don’t make that many higher-percentage bars because most cocoa beans require sugar to smooth out their complex flavors. But Eric had a vision here. He was convinced that the accessible, chocolatey notes in Freddy’s beans could stand out in a profound way. After many trial-and-error batches—and after encouraging everyone in the factory to repeatedly taste the results—he is delighted to see this 85% bar come to life.
The flavor notes we get in this bar include banana, raw peanut, and chocolate truffle. We are especially surprised by how sweet and smooth this bar is despite its lower sugar content.
