Dandelion Chocolate

Inspired by an Ecuadorian confection called Dulce de Higos ('Sweetness of Figs') — a traditional dessert of preserved figs simmered in spices, candied, then served with soft local cheese such as queso fresco — Ashley chose tender, locally sourced black Mission figs as the foundation for a Dandelion version of the Ecuadorian delicacy.

Each plump fig is hand-stuffed with creamy, spice-infused chocolate ganache, then hand-dipped in a generous layer of our 70% Camino Verde, Ecuador chocolate, and garnished with edible gold leaf. These California-grown Spanish figs, with their dark purplish skin and luscious honey flavor, are a variety similar to the Spanish figs enjoyed in Ecuador.

Rich local cream is infused with organic, single-origin spices from Burlap & Barrel, then gently hand-stirred into melted Camino Verde, Ecuador chocolate to form silky ganache truffle. When the ganache is firm enough to scoop, it is gently stuffed by hand into the center of each juicy, black Mission fig, and the whole fig is hand-dipped in more hand-tempered Camino Verde, Ecuador chocolate. Delicate gold leaf hand-placed near each stem provides a gleaming finishing touch.

Dandelion’s Confections Production Manager

When Ashley visited Esmeraldas, Ecuador on an environmental-education trip in 2012, she’d never heard of "single-origin" chocolate. But her adventures among Quito’s cobblestone streets, Esmeraldas’ hot dirt roads and sunny beaches, and in tangled rainforest underbrush sparked a flame in her heart. As a native Spanish speaker of Mexican descent, Ashley felt deep resonance with her surroundings in Esmeraldas, and the trip changed the course of her life. Now pursuing her cacao passion at Dandelion, Ashley created this elegant confection experience using the cocoa origin that shaped her path toward craft chocolate.

Ashley runs Dandelion’s Confections program alongside Sous chef Dillon Zell, producing our Single-Origin Truffle collection and Single-Origin Chocolate Nut Spreads by hand. Ashley takes inspiration from her Mexican heritage, the unique cultures surrounding each of our origins, and the abundance of locally grown California produce to create elegant confections that tell a story. Her ultimate mission is to honor and showcase the farmers behind each ingredient, through origin-focused, indulgent "mementos" to savor.
