Tasting Notes: crème fraîche, black coffee, and roasted peanuts
These beans come from Camino Verde Cacao, located in central Ecuador in Duran (near Guayaquil). Vicente Norero, the owner and general manager, is one of the most innovative cocoa producers we know. He buys freshly harvested, unfermented beans from over 100 farms and associations around Ecuador and aims to achieve optimal fermentation and drying, imbuing the beans with nutty notes we love. To create this rich, completely unsweetened bar, Eric roasted the beans at a relatively high temperature, bringing out a smooth, chocolatey finish. After an initial hint of bitterness, this bar reminds us of a creamy mocha sprinkled with roasted peanuts.
