Celebrating California's winter citrus bounty, our fresh seasonal tart showcases the bright, zesty fruit of the cacao pod married with peak-season blood oranges. Our house-made cacao-pulp jam is layered with vibrant blood-orange curd and encased in a crisp, buttery almond-sablé shell. The tart is garnished with lightly toasted soft meringue and glossy caramelized profiteroles filled with mixed-citrus compote and a kiss of chocolate cream.
