The list of ingredients is most notable for what it’s missing: chocolate! Instead, this cake highlights the tangy fruit of the cacao tree, which we source from San Pedro Sula, Honduras. We cook the flavorful pulp from each fresh bean pod with just a touch of sugar to craft our luscious jam filling. Paired with zesty lime mousse, light-as-a-feather coconut chiffon layers, and Italian meringue buttercream, this cake is the very essence of Spring. This cake serves 8-10 and is best enjoyed within one week.
