Dandelion Chocolate

Our 2017 Collection features ten rare and vintage all-70% single-origin chocolate bars no longer available anywhere else nested into a fabric and wood accordion box. Some of us here really love to collect and cellar limited-harvest chocolate bars like wine, and we enjoy tasting how finished chocolate can mature and evolve over time. This collection is especially appealing if you like to dive deeply into an appreciation of aged and handcrafted chocolate.

Included are longtime mainstays, like the tart Ambanja, Madagascar bar, and crowd-pleasing favorites, like the chocolatey Costa Esmeraldas, Ecuador bar. You'll also find bars that we will never make again, such as the chocolatey, mildly spicy bar from Mantuano, Venezuela, our earthy Butuo, Liberia bar from Liberation Cocoa, and the San Juan Estate, Trinidad. Some of these are only tempered a couple of times per year, and these particular harvests will never be repeated, including the Cahabón, Guatemala, and the Piura Blanco, Peru. This collection represents a moment in time of our factory's history and an exciting calendar year, never to be repeated, of building relationships with cacao producers around the world.

This accordion fabric-covered box with leather strap is designed in collaboration with acclaimed SF artist, designer, and builder Yvonne Mouser. This box is also one of our product maker's most time-consuming labors of love. Ten panels inside each collection box are glued into place by hand at our San Francisco factory. Each bar insert follows, and then all ten bars are nested into place. The accordion is carefully closed, then hand-tied to keep it snug.

All of our single-origin bars are made with just cocoa beans and sugar; no added cocoa butter, lecithin, or vanilla. Our chocolate is free of soy, dairy, eggs, and gluten, and it is made in a factory that does not process nuts.
