These beans come from the Tumaco region of Colombia with the help of two organizations. Cacao de Colombia encourages local cacao diversity by working with farmers to cultivate regional cacao, and then they buy their beans to ferment and dry. Uncommon Cacao connects the beans with chocolate makers willing to pay a premium for high-quality beans.
Chocolate maker Kaija developed a bar profile to highlight the unusual creaminess of these beans. We taste notes of wildflower honey, malted hot cocoa, and whipped cream.
